Vegan Appetizer for a Summer Gathering

As the seasons change, so do our pallets, influenced by fresh seasonal produce. Sticking with a summer theme, let’s prepare an appetizer with a plant-based vegan twist. Choosing to eat vegan or vegetarian is not only beneficial to your body, but also for the health of the planet. And food technology has made it easier than ever for you to substitute ingredients for plant-based alternatives. This recipe commonly contains goat cheese and honey, but let’s make it vegan (and irresistible) with cashew cheese and agave nectar.
Fig & Cashew Cheese Crostini with Agave Drizzle
What you'll need:
- 1 French baguette
- Olive oil
- Cashew cheese
- Fresh thyme (optional)
- Fresh or dried figs
- Agave nectar
How to prepare:
- Preheat oven to 375º. Slice the baguette into thin (¼ inch) pieces.
- Brush both side of the baguette slices with olive oil. Bake about 4-5 minutes on each side until golden brown.
- Right before serving, thinly spread some cashew cheese on the crostini. I like to mix my cashew cheese with a little chopped fresh thyme.
- Top with 2 thin slices of fresh or dried figs.
- Lightly drizzle with agave nectar, and enjoy!
