Back-To-School Sandwich & Fruit Kabobs

The back-to-school countdown begins! Savor these last days of summer vacation with kid-approved lunches that are delicious, nutritious and—best of all—easy to prepare. Sandwich and fruit kabobs are a simple lunch your kids can help put together. The whole grain bread provides fiber, the cheese provides a protein source, and the fruit is packed with vitamin C. Round out the meal with a side of fiber-rich frozen corn and a side of pumpkin seeds, rich in essential vitamins and minerals.

Sandwich Kabobs

  • Whole grain bread
  • Cheddar or mozzarella cheese (in block form so you can cut into chunks)

Cut each slice of whole grain bread into 4 squares.

Thread one square of bread onto a skewer, then add a chunk of cheese, and top with another square of bread. Continue in that pattern until all the bread and cheese have been used.

NOTE: If your child has a milk or dairy allergy, you can substitute with a vegan cheese or a lean deli meat, such as turkey, as your protein source.

Fruit Kabobs

Just about any fruit will work, but I like to use blueberries, kiwi, apple and cantaloupe for a colorful kabob that will appeal to kids and adults alike.

Cut the apples, kiwi and cantaloupe into small (1") chunks. Thread each fruit piece or berry onto the skewer, alternating the fruit in any order.
