Allergy-Friendly Kids' Lunch: Chicken Celery Boats
The first few weeks of the new school year can be crazy for parents. Reduce lunch prep time with this simple recipe. Crisp celery stalks and chicken salad come together in less than 15 minutes for a satisfying, nutritious lunch for your kids. This recipe is especially ideal if your children can't tolerate gluten or wheat. Serve the "boats" with sliced apples spread with peanut or almond butter for an extra punch of fiber and protein.
Ingredients
- 1 can white chicken breast packed in water, drained
- 1-2 tbsp. reduced-fat mayonnaise (If your kids are allergic to eggs, substitute with a vegan mayo)
- Pinch of salt and pepper to taste (optional)
- Celery stalks
- Sunflower seeds (hulled)
Preparation
- In a bowl, combine the chicken breast, mayo and (optional) salt and pepper to taste. Mix well.
- Cut celery stalks into small "boats."
- Fill each boat with the chicken salad mixture and top with a sprinkling of sunflower seeds. For a fun alternative, or if your kids don't like sunflower seeds, sprinkle with a few dark raisins.
