Kid-Pleasing Tortilla Pinwheels

Take a break from the traditional sandwich and pack your kid's lunchbox with fun and delicious tortilla pinwheels. I like to use whole wheat tortillas for better nutrition, but for kids with gluten or wheat allergies, opt for tortillas made with corn or rice flour. The recipe is super easy to make – have your kids give you a hand – and extremely versatile. Add whatever ingredients your children would like... thinly sliced cucumber, shredded carrot, grated zucchini. The options are endless. Experiment and create your own pinwheel masterpiece!

Ingredients

  • 8 oz. softened Neufchatel or reduced-fat cream cheese (If your child is allergic to dairy, substitute with a vegan cheese)
  • 1/4 cup shredded reduced-fat cheddar cheese (or a vegan substitute)
  • 1 lb. shredded cooked chicken or turkey (If you're in a hurry, packaged deli turkey or chicken slices will work)
  • 1/4 cup medium salsa
  • 2 stalks green onion, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 4 medium tortillas

Preparation

  1. Put everything except the tortillas in a bowl and mix well, blending all ingredients together.
  2. Divide the mixture into 4 portions. Spread the mixture on the tortillas and roll them as tightly as possible. (Tip: If the tortillas feel too stiff to roll, pop them in the microwave for a few seconds to soften.)
  3. Wrap the rolled tortillas in plastic wrap and refrigerate for several hours.
  4. Once chilled, remove the plastic wrap and slice the rolled tortillas into 1-inch thick pieces. If necessary, secure the pinwheel slices with toothpicks. Serve with sliced tomatoes and carrots for an extra dose of vitamin C.
